nisaa: (no wheat)

Wow. I haven't done one of these posts in a while. I had a Persian dessert called faloudeh tonight for my bday. I used to love it. But it no longer loves me. Faloudeh is a rose flavored sorbet type thing with little strands of wheat noodles throughout it - you'd have to try it to understand. I didn't think there would be enough wheat in it to hurt me but I was seriously wrong. Ouch! Four months of no wheat and I am reminded why I stopped.

Tomorrow someone at school is going to give me rice krispies treats for my bday cake which should be easier on my poor tummy. I've developped a new fondness for rice krispies treats since I gave up wheat. They're easy to find - you can even get them at Starbucks.

[livejournal.com profile] merchimerch and I played with my hubby's pancake recipe this weekend and used spelt flour, rice flour, and a little bit of potato starch to give it some chewiness and they tasted pretty much like regular pancakes. The proportions are: 2 cups any flour, 2 cups milk, 2 eggs and 1 tsp baking powder.

wheat-free and vaguely Persian/Indian treat

One of my friends found a fabulous rice crispie recipe with saffron, golden raisins or currants, and cardamon.
1/2 cup unsalted butter
1 (10 ounce) package miniature marshmallows
6 cups crispy rice cereal
1.5 teaspoon ground cardamom
1 cup chopped unsalted cashew nuts (actually I think he usually uses pistachios since his girlfriend du jour preferred them)
1 cup golden raisins
DIRECTIONS
In a large bowl, toss together the cereal, cashew nuts and raisins. Melt the butter in a large pan over medium heat. Stir in the marshmallows and cardamom until smooth. Pour in the cereal mixture, and stir until evenly coated. Spread evenly in a greased baking dish, and pat down lightly. Cool, and cut into squares.

You can also add a bit of rosewater.
