Pretty good recipe from epicurious. This is my bastardized version:
Take a few red snapper filets and rub them with oil on both sides and salt and pepper to taste.
A cup of that pasta sauce from your fridge that you have to use before it goes moldy
Chop up some scallions (2-3)
Peel, cut and seed a tangerine or clementine or a small orange into 1/2 size pieces
Add a few teaspoons of spicy Indian Relish from Trader Joe's (or anywhere else)
Mix it all together in a bowl.
Preheat oven to 475 degrees
Place oiled fish in a glass dish
Spoon the sauce over the fish
Cook for 12 minutes or until the fish is opaque in the center.
Serve over rice
Remember to feed your cats the water from the fish package. I think it might even taste better tomorrow once it's had time for the flavors to mingle
