Um, does anyone have any recommendations for foods to use at a Summer Solstice celebration? So far I've found fresh fruit, a wheel of cheese (to look like the sun) and I can always make cookies in the shape of the sun.
I'm trying to plan a Summer Solstice celebration at my school's garden (May Day got cancelled because of the rain which never came). I'm sorta the pagan consultant for this celebration.
All this talk of food's got me hungry. Off to forage in the cabinets.

Yummy Solstice!
"Recipes from a Vegetarian Goddess" by Kari Allrich
and either of the "Political Palate" cookbooks by The Bloodroot Collective
both are vegetarian & are arranged according to season.. although I also eat meat now, some of my favorite recipes are in those books.
Some other ideas: red pepper pesto, anything with fresh basil, lots of brightly-colored veggies, rosemary foccacia, fresh fruit tarts, anything that's fresh & in season at the local farmers' markets where you live. Food that is light, refreshing, and flavorful. Herbal iced teas. I'm sure there are tons of ideas online, as well.
This link seems to have a lot of recipes on it, as well.
